Extensive treatise on cookery by the Andalusian scholar Ibn Razīn al-Tujībī (ابن رزين التجيبي, d. 1293).

The folios have been bound out of order and should be read in the following sequence: ff. 101r-130v, 137r-148v, 131r-136v, 149r-169v, 203r-204v, 170r-173v, 179r-179v, 174r-178v, 180r-202v (see Best of Delectable Foods and Dishes from al-Andalus and al-Maghrib , ed. and trans. by Nawal Nasrallah [Leiden, Boston: Brill, 2021], p. xxviii).

The copy is defective at end and finishes abruptly with recipes calling for tuna (التنّ).

الحمد لله فضل نوع الإنسان على جميع الخلق وأختصه بمزية

قل مسز (؟) حرم زينة الله التي أخرج أحباده (؟) والطبية من الرزق والذي وسع

عباده إحسانًا وأفاض عليهم نعمه ..

Ends (f. 204v, lines 19-25, defective at end):

تأخذ من التن قدر ما تريد وتجعله في سفود من حديد وتشويه

على نحو ما ذكرت لك وتذهنه بملح محلول وزيت ومري نقيع وثوم مردوس

وفلفل وقرفة حتى يحمر وتأكله كذلك وإن أردت

أن تجعله في زيت وثوم مطبوخ مردوس فافعل ما تريد وكان هنيًا

إن شاء الله تعالى
